All right winters are here and that means more cozy evenings, more coffee, more chats, more chat pakore, more cake and more weight..haha. Winter season is a bitch that ways. It lures you into eating all the comfort food and gobble on all the cake and sweets and makes you forget about the fat that you are putting on behind those layers of clothing. And when the season ends you realize that everything you ate ended on your hips....
But I think the best feeling about winter are the afternoon, when you are done with all your chores and take time out to sit outside in the sun with a cup of tea or just laze out. One of my favorite things to eat while sitting out in the sun are oranges. Its just heaven to eat these citrus delights while getting all cozy and warm.
A few days back I was left out with more than lot of oranges and didn't had te heart to leave them to rot...so made this yummy coffee cake. Its a crumb cake with biscuit like crumbling top and soft and decadent bottom. Its very easy to make with shelf life of upto a week. But trust me it wont last that long....
.
Things you will need
1 Cup All Purpose Flour
1 Cup Granulated sugar
1/2 Cup butter
1 Tsp baking powder
1 Egg
1 Cup Orange Juice
1/2 Tsp Cinnamon Powder
1 Cup Granulated sugar
1/2 Cup butter
1 Tsp baking powder
1 Egg
1 Cup Orange Juice
1/2 Tsp Cinnamon Powder
Method
Mix APF, Sugar and Butter together. Get your hands dirty and mix them well until they become crumbly in texture.
Separate the mix in 2 halves.
Mix cinnamon powder in one half and keep aside.
Crack the egg open and mix it with orange juice until you get a smooth mix.
Mix baking Powder in the other half of the flour mix and add the egg and orange juice mix and whip to a smooth batter.
Grease the cake tin and pour the batter, tap it to release the air bubbles and carefully line the batter with the dry flour mix making sure it forms a layer and dont get mixed up with the batter.
Microwave it for 5 minutes (you can bake it as well at 180 degrees for 30 minutes).
Pierce the middle of the cake with a toothpick, if it comes out clean, then your cake is done.
Let it cool down and slice it up.
Enjoy this crumbly treat with your cup of hot coffe or tea.
